TRIACETIN
DESCRIPTION 1,2,3-Triacetoxypropane - is more generally known as triacetin and glycerol triacetate. It is an ester of glycerin and acetic acid and looks like an oily liquid with a transparent texture, devoid of color and odor. Taste parameters are bitter. There are no foreign impurities in its composition. It is marked E1518 in the food additives catalog.
Chemical formula: C9H14O6.
It dissolves in different environments with different strengths. For example, in water, ether and carbon tetrachloride, the solubility is average, in aromatic hydrocarbons and most organic solvents it is light and unimpeded.
In benzene, dissolution is not observed.
A remarkable feature of triacetin is its non-susceptibility to enzymatic processes, due to which it has an excellent ability to preserve the freshness of products for a long time.
