DESCRIPTION |
An organic compound with the formula C6H8O6, is one of the main substances in the human diet, which is necessary for the normal functioning of connective and bone tissue. Performs biological functions of a reducing agent and coenzyme of some metabolic processes, is an antioxidant. Biologically active (able to participate in biochemical processes) is only one of the isomers — L-ascorbic acid, also called vitamin C, which is naturally found in many fruits and vegetables. According to its physical properties, ascorbic acid is a white crystalline powder with a sour taste. Easily soluble in water, soluble in alcohol. The melting point of L-ascorbic acid is 190-192 °C (with decomposition). Due to the presence of two asymmetric atoms, there are four diastereomers of ascorbic acid. The two conventionally named L- and D-forms are chiral with respect to the carbon atom in the furan ring, and the iso-form is the D-isomer for the carbon atom in the ethyl side chain. |
